Cooking and Preserving Seaweed with Jennifer Burns Bright

Jennifer Burns Bright is an Oregon food and travel writer, teacher, and food consultant based in Port Orford on the southern Oregon coast. She specializes in sustainable seafood and foraging on coastal adventures, and has a decade’s worth of experience writing from Eugene about the agricultural avant-garde and restaurants in the Willamette Valley. Bright taught literature and food studies at the University of Oregon for seven years, led a faculty research group in the emerging discipline of food studies, and won a national pedagogy award for a team-taught, interdisciplinary class on bread. She holds a PhD from the University of California at Irvine and a Master Food Preserver certification.
Jennifer will demonstrate how to use different sea greens to prepare a variety of delicious dishes. The prepared dishes will then be available for tasting.
